Sunday mornings should involve pancakes. However, sometimes you don’t want to be weighed down by them all day. Here’s a light solution that will leave you energized and ready for the day!

And you can make them in your microwave in your dorm!


  • 1 ½ bananas, mashed
  • 3 eggs
  • 1 tsp baking powder
  • ¼ cup whole wheat flour


Mix bananas and eggs. Add baking powder and flour. Let sit for 10 minutes. For the pan, fry on a lightly buttered/oiled pan. For microwave, put batter on a microwave-safe plate and microwave for 1 minute.
