I hated eggs. Hated them. My dad would make scrambled eggs every morning for my sister and I would dramatically run out the kitchen with my hand clutching my nose shut. But the smell was absolutely atrocious. Last summer my sister took me to a now crazy famous LA restaurant called Sqirl. At Sqirl, they had a crispy rice bowl topped with a fried egg. I decided to suck it up and try the egg dish. It was delicious. The crunch from the rice paired with the butter-like softness of the egg was a mix of wonderful sensations. However this meal cost $10. Um. Ridiculous. So I went home and made it myself.
- 1 egg
- small amount of butter or fake butter (aka, margarine)
- 1 tsp. olive oil
- 1/2 package frozen brown rice (I suggest Trader Joe’s frozen brown rice
- varied chopped vegetables (I used tomatoes, zucchini, onions, and mushrooms)
- mint leaves
- basil leaves
- Salt and pepper to taste
Okay- you can use two pans. But if you only have one, that’s okay too. Firstly you’re going to get the oil on your pan HOT. Then pour half the package of frozen brown rice into the hot oil. It may spurt, so STAND BACK. Turn the heat down to medium-low. Sauté the rice for 2 minutes. It should start to crisp up. Once you see the rice turning a slightly golden color, add in the vegetables. Stir with a rubber spatula. When the vegetables are cooked, set aside.
Melt the butter slightly in a clean pan on medium low. Crack an egg onto the pan. Put the a lid onto the pan. The steam will slightly cook the top of the egg. But if you like your eggs more well-done, flip the egg by sliding it onto a spatula then turning then flipping it back onto the hot pan.
Put the rice mixture into a bowl and add the egg on top. Garnish with mint and basil leaves. If you don’t have them, that’s okay! Just top with some salt and pepper.
How is this cheap? Good question.
Well, a carton of 12 eggs is around $2.99 for organic, cage-free eggs. That’s a quarter per egg. Or if organic does not matter for you, then buy the cheapest eggs you can find. My boyfriend buys a carton of 36 for him and his 4 roommates at Safeway for the same price. I have a ton of egg-tastic recipes that I will post later on that you can use those eggs for. Frozen brown rice from Trader Joe’s is $3.49. Each box comes with 3 packages of brown rice. And because I suggest just using 1/2 a package per serving, you get around 6 servings per box. That means you will be using 58 cents of rice.
